Our Story
Hudson Hil’s Cafe and Market was formed in 2010 as the movement to source and utilize local food started to dominate conversations. After multiple discussions with community members, Bob and Hilary Hayes decided to utilize their culinary and financial experience to open Hudson Hil’s in Cold Spring, NY. Hudson Hil’s strives to create a comfortable and relaxed experience while providing guests with high quality, from scratch food, made with locally source and organic ingredients when available. Our eggs, meats, dairy, locally blended teas, locally roasted coffee, and produce come from suppliers and farms in the Hudson Valley. We are constantly working to deepen our relationships in the Hudson Valley and keep our menu selections fresh, fun, and unique.
